First day in a long time that me and my date have a day off together. What to do? Doesn't have to be columbus day related, but holidays on Monday suck cause museums are closed ... and thats typically my first choice.

He's put me in charge of planning our day, I suck at it, help!

Wouldn't mind doing some light hiking in nearby suburbs... any ideas? Or have a lazy day somewhere...

i would go to:
P.J. CLARK'S ON 3RD FOR LUNCH
then a carriage ride through central park
then a walk over to rockefeller center
then a stroll/window shopping down 5th avenue
then a drink at the sherry netherland's piano bar
then a dinner at angelo's in little italy!

Drive out to Brighton Beach, Take Coney Island Avenue south to the end. Enjoy the last of the warm days before winter. Walk along the beach a while. Then drive back into Bensonhurst, to 18th Avenue, and in the 70s. You should be able to find a number of Italian eateries with great food and reasonable prices. Soak up that pseudo Italian atmosphere as well, and have gelati at Villabate's pastry shop on 18th and 72nd.

Try an outdoor tavern-restaurant setting-perfect season for that.

Some antiques shops sounds along your line.

Any near by rivers that you can take a river boat cruise on?

Zoo's/museums aren't on my date list.

Theme parks are!
