I would have to say "uni", which is the raw 'gonads' of the sea urchin often served as sashimi at Japanese restaurants. It's as good as, or better, than fois gras, but without the guilt.

It's got to be pig. Ham, bacon, sausage, brats, pork chops, pork loin, pork rinds, even lard makes great biscuits and tortillas! I love the little piggies. Here piggy, piggy!
