As a Buddhist and a Southerner I like to slice the green tomatoes about 1/4 inch thick, rinse the slices in water, shake them off and dredge them in cornmeal mixed with salt, white pepper and a bit of cumin/coriander. Then fry them on medium-high heat in a cast iron pan using olive oil.
