INGREDIENTS
1/2 cup dry mustard
1/2 cup white vinegar
1 teaspoon salt
1/2 teaspoon pepper
2 tablespoons white sugar
3 egg yolks, beaten
DIRECTIONS
In a heavy saucepan combine mustard, vinegar, salt, pepper and sugar. Simmer over low heat for 3 hours.
Beat egg yolks into mixture and stir until thickened. Pour into hot, sterilized jars and seal. Cool at room temperature and store in the refrigerator.

You need a daddy mustard plant and a mummy mustard plant. No seriously, you can either start with mustard powder (from the store) and add water (for English mustard) or water and vinegar (for dijon mustard). You can also use mustard seeds (from the store) and crush them with water. Make sure that you use mustard seeds that are meant for eating and not for planting, as many seeds will have been treated with chemicals to prevent them from rotting or sprouting.

Chinese Mustard Sauce

1 cup Vinegar
1 Tbsp Grated ginger root or 1 tsp Dry ginger powder
1 cup Sugar
2 Tbsp Soy sauce
1 Tbsp Colman's Mustard
1 Tbsp Cornstarch

Bring to a boil vinegar, sugar, salt and soy sauce. Mix cornstarch and Colman's Mustard in 1/2 cup cold water. Stir in and cook until it thickens. Grate in ginger root (or dry ginger).
Ginger root, finely grated makes a hotter mustard.

mix mustard seeds with water or vinigar - you can crush them first if you want or take jar from fridge and open or take colman's mustard powder and add water
