How about Bourbon Chicken or a Stir Fry or Garlic chicken?(recipes below)
Bourbon Chicken-
MARINADE:
1/2 cup Jim Beam Bourbon Whiskey
1/2 cup brown sugar
4 ounces soy sauce
2 tablespoons dried minced onion
1 teaspoon powdered ginger
1/2 teaspoon garlic powder

1 pound chicken leg or thigh meat cut in bite size chunks
2 tablespoons white wine
Mix all the marinade ingredients and pour over chicken pieces in a bowl. Cover and refrigerate (stirring often) for several hours (best overnight).
Remove chicken from marinade. Preheat oven to 350 degrees F.
Bake chicken at 350 for one hour in a single layer, basting every 10 minutes. Remove chicken.
Scrape pan juices with all the brown bits into a frying pan. Heat, and add 2 Tbsp white wine. Stir and add chicken. Cook for 1 minute and serve.

Boiled Chicken with Mushrooms-
3 TBS veg. oil
2 onions, chopped
2-3 stalks celery, chopped
1 (4lb) chicken, cut into serving slices
salt &pepper
1 bay leaf
2 TBS butter
2c. mushrooms, sliced
1 tsp worcestershire
3TBS flour
1 thick slice bacon, cut into pieces
Heat oil in large saucepan. Add onion and celery ans saute for 3-4 min. Add chicken pieces and giblets and bacon. Add water to cover, salt ,pepper, and bay leaf. Bring to a boil, cover and simmer @ 2 hours or until chicken is tender. Transfer chicken to a serving dish and keep warm. Stain and measure out 1 1/2 c. broth. Melt butter, add mushrooms and saute 3 min. Stir in worcestershire and flour. Remove from heat and gradually add in broth. Return to heat and wisk until boiling. Boil 2 min. Adjust seasonings and remove bay leaf. Pour sauce over chicken pieces and serve.

Garlic Chicken-
2 medium onions
1 TBS cayenne
8 large cloves garlic
1/3 c salt
1 tsp pepper
1 c water
Blend all together. Pour into large bowl. Add 7 cups water and stir. Pour into 3 separate gallon baggies. In each baggie add 8 pieces chicken. (8 legs, 8 thighs, 8 breasts) Marinate at least 12 hours in refrigerator. Dredge in flour and salt (or egg then flour) and fry in oil until done.

A quick easy one is with coarse salt.
Fill the bottom of a cooking pan with coarse salt (maybe 1/4 inch deep)
Put the chicken on top.
Throw it in the oven
The salt absorbs alot of the grease etc from the chicken, and gives it a little flavor as well.
Actually taste alot better than the description sounds lol
Very tender chicken with a hint of a salty taste.
And believe it or not, it is quite healthy as well.

A baked/roasted chicken with lots of various herbs and spices (no salt - Mrs Dash instead) inside the cavity. Also oranges stuffed inside of the cavity and under the skin. If you have a flavor injector, inject orange and pineapple juice into the chicken. It will make if very tasty and moist. Bake for about an hour. It is also low in sodium.
Homemade mashed potatoes from scratch with no salt butter and crushed garlic. Don't peal all the outside off the potato. Leave a little bit of skin on them. Also no salt when cooking them but use Mrs Dash table blend. (I use Mrs Dash table blend instead of salt. My husband is on low low sodium diet. The step daughters can't tell the difference.)
Fridge canned reduced fat rolls or biscuits.
For dessert, an angel food cake with fresh fruit in it's own juices. Get frozen fruit, add a little sugar or splenda and let thaw. It will make its own juices.

1 (3 1/2 to 4-pound) chicken, giblets and cavity fat removed
Coarse grained salt and cracked black pepper
1 cup freshly squeezed lemon juice *see note
1/4 cup olive oil
1 tablespoon red wine vinegar
1 clove garlic, minced
1/4 teaspoon dried oregano
Salt and freshly ground black pepper
Chopped parsley, for garnish
Note: if you don't like super-lemony lemon chicken ? use 3/4 cup lemon juice and 1/4 chicken broth or water
Preheat oven to 500 degrees F. Put the oven rack in the middle of the oven.
Using a sharp knife or poultry scissors, cut through bones on either side of backbone. Remove and backbone (save for soup stock). Place chicken breast side up on cutting board. Flatten chicken by placing the heel of your hand over the breastbone and pressing down firmly. Season chicken generously on all sides with salt and pepper. Refrigerate overnight or let stand at least 1 hour in the refrigerator.
Roast chicken, rotating once, for 20 minutes, reduce heat to 325 degrees F and cook 15 minutes more or until an instant read thermometer inserted in thickest part of thigh reads 160 degrees F, or until juices run clear.
While chicken is roasting make the lemon sauce. Whisk together lemon juice, olive oil, red wine vinegar, garlic, and oregano. Season with salt and pepper.
Remove the chicken from the oven and place on a cutting board. Cut chicken into pieces. Pour the fat off the broiler pan, leaving the solids. Add chicken back to pan. Pour lemon sauce over the chicken and place the pan back in oven and cook for 5 minutes. Garnish with parsley. Serve over rice.
Tip: The recipe works perfectly fine with a whole chicken cut in half, quarters, eighths, or any which way. If you're cooking for one, cut the recipe down and the cook time too.
Tip: If you're the least bit apprehensive about cutting up a hot chicken, buy it cut up or cut it up yourself before you cook it.

rotisserie chicken roasted chicken cooked till its juicey and drained of its fats and or potatoes freshly made with a vegetable or chicken parm sandwich or chicken parm with pasta or chicken nuggets with mac and cheese or tenders and fries or grilled chicken sandwich or chicken kabobs with veges like grape tomatoes and onions or chicken soup or grounded chicken and make tacos or burgers or grilled chicken salads

baked chicken. while the chicken is baking put sweet
potatoes in the oven with it. they will bake just like
white potatoes, but are much healthier. all a green salad
with vinaigrette dressing and fruit for afters.
