The back straps and inside loins,any steak cut like t-bones..........Actually there is no bad meat from an elk,I think its the best red meat you can eat.

i like the t bones they are the same as beef it has the backstrap or tenderloin in it and i like cooking them with the bone in..a steak...i had my elk in montana...cut that way......of course the tenderloin is the best as far as many people prefer...some people like venison backstrap but i prefer the chops.....

The tenderloins...some people call them backstraps.
