When baking certain things you have to cover with aluminium foil. What does that help with, and what would happen if you didn't use the foil?

it helps keep the moisture in and keeps it from browning before it is baked inside.if you do not cover with foil i item will be brown on outside and dry inside

Well, usually when you wrap things in aluminum foil it is to conserve the heat so that the food inside the foil doesnt get all weird and soggy and gross.

One, it steams and keeps it from drying out. Two, it prevents over-browning.
