Add vinegar to the water when cooking the egg.
Then make sure to peel the egg as soon as it is cool enough to handle.
Works like a charm.

Boil your eggs for about 5-7 minutes. Put the pan under the cold water tap, until the water in the pan is very cold. Leave them for 5 minutes. Then find a hard surface, and tap the egg gently but firmly, and roll it until the shell has become crumbly and loose, but the egg's still intact. Then you should be able to pop the egg right out. Some will naturally be more tricky than others, when the skin sticks, but that process should make it easier to peel than it would otherwise have been.

You have to put the eggs in ice cold water immediately after cooking. There are a few suggestions above that are similar. Then you start by tapping the wider end on the counter and rolling the egg to crack the rest of the shell. Make sure to seperate the membrane and peel off, you should have a perfectly peeled egg.

COLD-WATER Method for Hard-Boiled Eggs

1) Cover eggs in pan with enough cold water to cover all eggs.
2) Bring rapidly to a boil.
3) Turn off heat and set pan off burner to prevent further boiling.
4) Cover pot with lid and let stand in hot water for 20minutes.
5) Cool immediately and throroughly in cold water(add ice cubes to aid the cooling process).

This method of making hard boiled eggs helps the shells to be removed easily and prevents dark surface on yolks.

The fresher the egg the harder it is to peel. So... i guess that means use an older egg. =)
