Ricotta is really the filling base par excellence, but when I last made ravioli, I added a little bit of SMOKED mozzarella along with finely chopped wild mushrooms and some fresh thyme. They were to die for. You might give that a try. (I served them with a very plain sauce of cream reduced with a splash of dry sherry, a pinch of nutmeg stirred in at the end.)

Try different things!
I would try soft goats cheese, a little goes a long way. On it's own or mixed with a milder cheese like riccotta.
You have to taste different kinds of goats cheese, some are stronger than others. The sauce you will use depends on the strongness of the cheese. Goats is great with spinach.

I use Ricotta blended with Romano and Italian herbs for the filling and use fresh parmesean over the top. I have heard of people using Marzacapone but i have never tried it. Hope this helps.

Ricotta, but i have also had it made with small curd cottage cheese. Add seasoning though, Parmesan, oregano, basil, garlic, etc...

mozzerlla and or rigotta [ bouth or one] add italion seasoning , oregino basal garlic pich off parmesan chees mix well an stuff in....
