it's Shaolin Wushu, yes you are correct, there are at least 18 different Martial Arts disciplines (Bagua, Drunken Boxing, Eagle Claw, Hsing I, Hung Gar, Lau Gar, Monkey, Praying Mantis, White Crane, Wing Chun and Tai Chi Chuan) based on this one disciplines name.
the five animal disciplines are just a small part of the whole. Some disciplines put most of their focus into the belief of the harnessing of qi (or chi) energy, while others concentrate on competition and exhibition.
it was based around the Bodhidharma a visiting indian Buddhist monk who noticed the monks were falling asleep during meditation and devised a series of exercises to boost their physical stamina that was later developed into this discipline although there is evidence of martial arts being practiced in ancient india long before the developnment of the Shaolin martial arts tradition.
The fighting disciplines that are practiced today were developed over the centuries, after incorporating forms that came into existence later.

Shao Lin is the one with 5 animal styles. Someone listed them, so I needn't repeat it. It also has 5 family styles. There are unorthodox animal styles too, e.g. Mantis, Monkey, etc. Most esoteric is the 5 Venoms style based upon 5 animals that have poison supposedly: Snake, Scorpion, Centipede, Spider and Toad. I like the Toad best, for it is difficult to hurt a master of it.
