Interstates are a fact of life. now where are you going, you can tell google maps that you don't want any interstates in the directions.

Mapquest gives you the option of avoiding highways, but only for shorter trips (less than 60 miles, I think). If it's a longer trip than that, then all you can do is give a multi-city route in order to force it to avoid them. It's not easy, but doable.

What is your origin and destination? There are a lot of US routes which parallel interstates.
