Whether they're fried or otherwise - I have at least twenty green tomatoes on my plants and autumn is here, they are not turning and I don't want them to go to waste. Is is true to add sugar to green tomatoes to cut the bitterness in any recipe?

Broiled Tomatoes with Cheese

green tomatoes
celery salt
pepper, to taste
finely ground bread crumbs
1/4 cup grated Parmesan cheese
1 egg beaten well and diluted with 2 tablespoons water

Wash green tomatoes. Drain and dry. Cut tomatoes crosswise into halves and slice a small piece off the tops and the bottoms. Sprinkle the halves with celery salt and pepper, to taste.

Combine bread crumbs and cheese. Dip tomato halves in bread crumb mixture. Then dip in egg-water mixture and again in bread crumbs. Place breaded halves on a greased pan in a moderate oven, 375 degrees and bake until they are nearly soft. Place under broiler, turning once, until they are brown. Serve. Delicious!!

Green Tomato Pie

INGREDIENTS:
6 to 8 medium green tomatoes
2 tablespoons lemon juice
1 teaspoon grated lemon peel
1/2 teaspoon salt
1/4 teaspoon pepper
3/4 cup granulated sugar
2 tablespoons cornstarch
1 tablespoon butter
pastry to 9-inch 2-crust pie
PREPARATION:
Wash the green tomatoes well; peel and slice. In a saucepan, combine tomatoes with lemon juice, peel, salt, and cinnamon. Cook tomato mixture over low heat, stirring frequently. Combine sugar and cornstarch; stir into tomato mixture.
Cook mixture until clear, stirring constantly. Add butter, remove from heat, and let stand until slightly cooled. Line a 9-inch pie plate with pastry; pour in tomato mixture. Cover with top pastry, seal edges, crimp, and cut several small slits in crust to allow steam to escape. Bake at 435° for 35 to 45 minutes, or until nicely browned. Serve warm or cooled.

Simple Fried Green Tomatoes

Slice tomatoes to desired thickness .
Dip in beaten egg
Coat with plain or italian bread crumbs
Fry in oil until crisp
serve w/horseradish sauce or ranch dressing or bleu cheese (your choice)


You can also slice them and add them to thinly slice sirloin or roundsteak seasoned with salt, pepper, garlic, and add green peppers and onions. Add a lil water. let simmer and serve with rice.

simple......salt and pepper them, (i add a little garlic powder)
cover them in a mixture of corn meal and flour.....more meal, like a little more than 2 to 1.......fry them without turning until the bottom turns brown.....flip them then.....too much flipping will make your batter fall off, because it is so dry.....
enjoy, green tomatoes are all done here......(sniff, sniff)
