Red and yellow are sweeter. Green and aubergine colored are more peppery tasting. Red and yellow also tend to be meatier and juicier which makes them roast more nicely.

yellow and red ones tend to have a sweeter taste than green ones. The only reason why any of them would be spicy is if you do not remove the white seeds and white skin from the inside.

only the time left on the vine green as it un ripe yellow almost ripe red ripe flavor change is very slight use all at same time for a nice color scheme

There is a slight difference in the flavor (bitter to sweet, but very slight).
The biggest difference are the nutrients.
Chop or dice all three and add them to your dish to maximize on the nutrients.

Red has more vitamin C, the rest is for visual color use in a dish....the flavors are slightly different in each! Try organic, they taste even better!!!!!!!

they have no difference they were just left on the tree longer to get more/less color, but they still taste the same you just add more pepers to a plate to add color
