A side I love w or w/o any Italian dish is Insalata Caprese:
Sliced fresh mozzarella, sliced plum tomatoes, torn basil & seasoned with salt, black pepper, and olive oil.
You could serve this one with angel hair pasta with roasted garlic and evoo. Grilled asparagus on the side.
Chicken Rollatini/Saltimbocca/Involtini
4 skinless, boneless chicken breast halves
1/2 cup shredded Parmesan cheese
1 clove garlic, finely chopped
4 teaspoons butter
4 ounces thinly sliced prosciutto
10 ounces sliced whole milk mozzarella cheese
1/3 cup white wine
1/4 cup olive oil
1 pinch black pepper
Preheat oven to 325 degrees F (165 degrees C). Pound chicken breasts flat, and lay them on work surface. Sprinkle liberally with Parmesan cheese on both sides. Place a pinch of minced garlic and 1 teaspoon butter in the center of each breast. Cover each breast with a layer of prosciutto and mozzarella cheese. Reserve some of the prosciutto to place on top of the chicken. Roll up each chicken breast, and secure with toothpicks.
In a 9x13 inch baking dish, combine white wine and olive oil. Arrange chicken rolls in dish. Place a small piece of prosciutto on top of each roll, and sprinkle with pepper. Bake in preheated oven for 30 minutes, or until chicken is no longer pink, and juices run clear.
Another idea: Grill the chicken with some lemon juice, then slice thinly. Boil up some penne and add the chicken & cooked pasta to the Insalta Caprese.
For dessert - Tiramisu.

place a slit in the side and stuff with some canned crabmeat...bake at 375 for about 10 minutes an then under the broiler until brown.....watcg when under broiler carefully...i leave oven door cracked then i see them...serve with boiled new potates with mint and butter.......and sauteed asparagus .....you need no seasoning on the chicken only a little cajun spice in the crab meat oh yeah just as the breasts are almost brown add a spoonful of mayo on them and finish browning..

bake in oven for 45-60 mins covered in foil..will be very juicy and will taste great....try and instant seasoned rice side with steam aspargus

Why don't you just bake it and add au gratin potatoes and salad for the sides? Try sauteed vegetables also.
