STEAK DIANNE SAUCE

1/4 cup butter
1/2 cup fresh mushrooms thinly sliced
1 clove garlic pressed
1/4 teaspoon thyme
1/4 teaspoon freshly ground pepper
1 tbsp lime juice
1 tsp worcestershire sauce
2 tbsp minced fresh parsley

Cook and stir all ingredients except parsley,until mushrooms are tender. Add parsley. Set aside
Reheat and pour over steaks just before serving.

STEAK DIANNE (With mushrooms, brandy, heavy cream)

Ingredients:
1 1/2 lbs. strip beef loin steak
3 Tbsp. butter
1 cup flour, seasoned with salt, pepper and paprika
4 shallots, julienned
3 large portabello mushrooms, sliced
2 oz. brandy
2 Tbsp. Worcstershire sauce
2 Tbsp. dijon mustard
3/4 cup heavy cream
1 Tbsp. fresh parsley, chopped

Trim the strip loin of all the fat. Slice lengthwise into 6 thin slices, and pound them using a tenderizer. Dredge in seasoned flour.

Melt the butter in a large saute pan over medium heat. Sear the steak one minute on each side. Remove from the pan.

Add mushrooms and shallots to the same pan. Saute until tender. Add brandy and reduce by half.

Add mustard, cream and Worcestershire sauce and reduce by a quarter.

Place the cooked steaks back into the sauce and simmer for 2 minutes. Sprinkle with parsley.

Here is a classic recipe

4 pieces fillet steak 1/4 inch think
1 oz (25 g) butter
2 tbs oil
worcestershire sauce
2 tbs lemon juice
1 1/2 tbs finely chopped or grated onion
2 tbs chopped parsley

Heat butter and oil. Fry steaks for 1-2 minutes on each side. Remove from pan and keep hot. Add worcestershire sauce to butter and oil in the pan, then add lemon juice and warm through. Add onion and parsley and cook slowly for 1 1/2 minutes. Spoon sauce over steaks and serve immediately.

This seems like a very easy recipe:

1 clove garlic, pressed

1/4 tsp. freshly ground pepper
1 tbsp. lime juice
1 tsp. Worcestershire sauce
2 tbsp. minced fresh parsley



Cook and stir together all ingredients, except parsley, until mushrooms are tender.
Add parsley. Set aside.
