You make the Crepe batter, it's a thin version of pancake mix, that you can add any flavor. Then select the fruit of your choice, like if you use fresh peaches, put some white sugar in the bottom of a pan heat until it begins to turn carmelize, add the fresh and or frozen sliced peaches, 2 tbl spoons of butter some Gran Marnier, or no alcohol at all, let the peaches cook for maybe about 10-15 minutes or until soft, and serve it on the crepes, and you can drizzle the reserved sauce over the crepes asa garnish with some whipped creme. This will be delicious. You can do the same thing with Bananas, and or other fresh of frozen berries. Enjoy, and have fun making your crepes.

Fruit Crepes

Ingredients:

Crepes:

1 cup milk
1 egg
1 cup all-purpose flour
Pinch of salt
Vegetable oil

Filling:

Available seasonal fruits
Whipped cream

Garnish and Serve:

Custard Sauce or Fruit Sauce
Heavy Cream, whipped
Strawberry Crush or any Jam
Mint Leaves


Method:

Crepes:

Mix first 4 ingredients well, making sure no lumps remain. Heat a small, preferably Teflon-coated frying pan on the stove. Put a little vegetable oil in the pan and one-quarter of the batter and cook like thin pancakes until golden brown. Repeat with the rest of the batter. Makes 4 crepes.

Filling:

Mix chopped fruits with whipped cream to bind them. Spoon this fruit filling on to the crepes and roll them. Place the filled, rolled crepes on a serving plate.

To Serve:

Pour chilled flavored custard sauce on the crepes. Flavor the sauce with fruit preserves. Garnish with cream and mint leaves. Serve chilled.

It's pretty simple.
First get the crepe cooker which looks like a pan only you cook on the bottom of the pan and recipes abound on the internet for different types of crepe.
Then you add you own fruit to the crepe or fill with some fruit/creme cheese mixture then roll it up and put the fresh fruit on top....MMM mmm good
Make a search for fruit crepes on the web and you get thousands.

CREAMY FRUIT CREPES

1 1/4 c. sifted confectioners' sugar
1 tbsp. lemon juice
1 tbsp. grated lemon rind
1/2 tsp. vanilla
1 (8 oz.) pkg. cream cheese, softened
1 c. frozen whipped topping, thawed
3 1/2 c. sliced fruit
8 crepes

Blend sugar, lemon juice, lemon rind and vanilla into cream cheese; fold in whipped topping and 3 cups of the fruit. Fill each crepe with about 1/3 cup cream cheese mixture; roll up. Top each with additional cream cheese mixture and garnish with remaining fruit slices. Makes 8 servings.

CREPE BATTER:

2 eggs
1 c. milk
3 tbsp. vegetable oil
1/2 c. unsifted flour
1/2 tsp. baking powder
1/2 tsp. salt

Beat together eggs, milk and oil. Gradually add flour, baking powder and salt; stir until smooth. Cover and refrigerate at least 2 hours. For each crepe, pour scant 1/4 cup batter into heated, lightly oiled crepe pan; rotate pan quickly to cover bottom with batter. Cook over medium heat until top appears dry and underside is golden. Turn to brown other side. Repeat with remaining batter.

READ THIS !!!!!! first you need a crepe pan, get that at like williams sonoma or some cooking place like that, then, the easiest way to make them is to get a crepe mix at any store, (most likely trader joes) they tase just the same. then follow all of the instructions and there you go. if you want to make them from scratch then go to foodnetwork.com and type in crepes and that will propably give you the recipie
