I want to make a home made pizza tonight should I make a pizza sauce, like one you cook, or just a fresh tomato topping with some fresh herbs and garlic. Also I'm making the dough homemade should I make one thick crust pizza or two thin crust pizzas?

You could get ready made pizza topping sauce (usually in jars) or you can use passata or even tomato puree (something thick). Good luck and enjoy your yummy pizza!

I think since your making the dough from scratch why not make the sauce too. Fresh thin slices tomatoes can be added to the pizza with the nerbs of your choice and it will give your pizza a nice flavor. Also I think making a thin crust pizza would be better, because 9out of 10 people really don't want to eat the crust, and always want to throw it away. So instead of having that issue just make thin pizza's. I hope all goes well.

Basic Pizza Sauce

1tsp Olive Oil
3/4c onions, minced
1 clove garlic, minced
2c tomato sauce (I use 1 14oz (398ml) can and 1 7.5oz (213ml can) mixed together
which ends up being slightly more than 2 cups)
5.5oz (156ml) can of tomato paste
2 tbsp dried oregano
1 - 2 tbsp red wine vinegar
1 - 2 tsp sugar

Heat the olive oil in a medium sauce pan over medium heat. Add onions and cook for about 2 min.
Add the garlic and cook 1 min more. Onions should be soft by now, if not, cook a little longer.

Add all the remaining ingredients. Bring to a boil over medium then reduce heat to low.
Cover and simmer for about 10 - 15 min, stirring occasionally.

Cool completely before using. Freeze any excess in storage bags for future use.
Makes enough for about 4-5 12" pizza's.......freeze the rest for next time or use
on sandwiches with some cheese for a quick pizza pop.....just nuke it!!!

Put the sauce on a piece of chicken, then add toppings such as cheese, bacon and bbq source then cook in the oven. You could also get savoury muffins, then put the sauce on top and add a pizza topping of your choice to then make smaller versions of pizzas that you can heat up any time in the day for a snack, or take out with you for a packed lunch x

I would defineately find a sauce recipe you like, the sauce makes the pizza the meats/veggies just add to the event.
I use this when I am out cooking at BBQ cookoffs and everyone seems to like it. It is off of Cook.com.

Dissolve 1 package yeast in 1 cup warm water. Stir in 1 teaspoon sugar, 1 teaspoon salt and 2 tablespoons olive oil. Add 2 cups flour. Beat until smooth. Add enough more flour, about 1 1/2 cups to make a soft dough. Turn onto lightly floured board; knead until smooth and elastic. Place in greased bowl; brush top with oil or shortening. Cover; let rise in warm place until doubled. Punch down; shape at once or cover and refrigerate. 2 - 12 inch.

PIZZA SAUCE:

Cook 1/2 cup minced onion in 1 teaspoon olive oil until golden. Stir in 1 (8 ounce) can tomato sauce, 1 (1 pound) can tomato puree, 1/4 teaspoon salt, 1/4 teaspoon pepper, 1/4 teaspoon garlic salt, and 1 teaspoon crumbled oregano. Simmer 30 minutes. Refrigerate until ready to use. 2 - 12 inch.
DIRECTIONS FOR DOUGH AND SAUCE:

Make dough and sauce. Divide dough in half; round up into 2 balls. Roll or pat each into 12 inch circle. Place on greased baking sheets; press around edges to form 1/2 inch rim. Brush dough with olive oil; cover with pizza sauce. Top with lots of cheese and extra toppings as desired. Do not let rise; bake at once at 425 degrees for 15-20 minutes until nicely browned.

I say 2 thin crust pizzas and then you can make 1 with pizza sauce and the other one with olive oil, roasted garlic, fresh tomato slices, cheese and basil.
*** Then you can enjoy both and see wich one you like doing better for next time.

Definitely thin crusts, thick ones are sometimes hard to cook at home & come out doughy and pasty.
As for the toppings, I'md go one of each for variety, cause they both sound really good!
