Beef comes from cows (cattle).
There are burgers from other meat sources. Notably they are from buffalo (bison) and large birds (emu and ostrich).
If you're asking about fast food hamburgers, there is some amount of beef with possibly soy or grain filler. the beef in fast food hamburgers is not necessarily of the grade of a home made or "gourmet" hamburger.

beef comes from cow. hamburger is ground up cow and fat. thats why they give you the options on 80/20 or 90/10 beef. 80 or 90 is the amount of cow and 20 or 10 is the amount of fat in the hamburger.

Well beef comes from cows, however the beef in hamburgers is the crap off the floor of the factory that wasn't high enough quality to go into dog food.
