Apple Yields

One pound of apples equals 2 large, 3 medium or 4 small apples.

One pound of apples yields 3 cups of diced fruit or 2 1/2 cups of peeled, sliced fruit.

Two pounds of apples is enough for an average 9" pie.

For a deep dish 9" or 10" pie, figure about 3 pounds or 8 to 9 medium size apples.

That works out to 4-5 apples sliced per pie depending on the size of the apples. More for smaller ones and less for larger.

I usually use 7 or 8 apples for an apple pie.

One good size apple like a red delicious will be about .4 lb so a little over five of them in a pie is good. You should always fill the pie shell up. If you feel you have overstuffed the shell, then I add a dab of each of the major ingredients to make up for it. on your first try 2.5 large apples will do it. You can alwyas weight them at the store.....

Find something that weighs about 1/2 pound - a tin of beans is just a bit below that- and guess/measure it five times. If you put in too little, you'll just get a shallower pie, but if you put in too much it might overflow the pastry and make a mess. But go for it anyway. Cooking is an art, not a science. Suck it and see, literally.

the best way is to fill your pie shell with the apples that have been peeled and cut....it should be heaping up above the crust as they will reduce......i would start with 7 apples......be sure and keep the peeled apples in vinegar water or lemon water to keep from turning black....
