The rule of thumb is the lighter the food, the lighter the wine. So for a dish like fettucine alfredo, you don't want to be serving a red wine because it will overpower the flavor of the dish. Similarly, with your chicken parmesan, you want to serve a stronger (red) wine so that the flavor of the wine is enjoyed.

The weddings I've been to each had a bottle of red and white wine at each table (hint, hint,) the servers would come around the table and ask everyone 'red or white'.. however, if I were to choose just one, I would go with red, just because I like a robust and complex red wine.

Just read Funloving Misanthrope's answer below - he/she brings up a good point with respect to personal preference as did some others, and he/she lists a pretty good selection of Italian wines there as well - it'd be a good idea to consider these options. Just remember you're serving to a large group, and having the choice of red or white will please your crowd more, whether they prefer to "play by the rules" or not.. from my experience, it's more of a 60%-40% to 70%-30% split on rules vs. breaking the rules.

Generally I prefer white over red because I don't care for really dry wines. However, I have seen fruit wines gain a lot of popularity lately. Two of my favorites are Blackberry Merlot and Strawberry Zinfandel, both sold under the Wild Vines name. Try them, I bet you'll like them.

Depends on how bad you want your hangover to be... Darker drinks equal worse hangovers! Thats a fact! Also, more people are likely to have adverse reactions to the tanins in red wine (they exist in white too, but not as many as they are found in the grape's skin which gives the colour of red wine). Adverse reactions range from headaches (not hangover types) to rashes. So all in al i would have to say that white is a safer option if you are drinking in volume!!

Red wine only. it has proven positive affects on your blood flow and your heart. it can reduce risk of heart attacks, and it tastes more flavorful than white wine. white is good if youre eating fish or chicken, but in my opinion it tastes like bitter grape juice and isnt worth the money. Try a Pinot Noir, its a milder red and youll have little or no hangover the next day.

For me; white wine washes down the food good. It"s tarty yet not too much flavor of its' own. Then I"d prefer red wine with dessert rather than coffee. Sweet goes with sweet. After that, well: a very romantic evening should be on the way....

Strictly speaking, red with red meat, white with chicken or fish - but these days, lots of folk just drink the one they prefer, whatever the situation. Cheers!
