place salt pepper and butter in the cavity and on the outside of turkey cover with a lid or with foil and cook 2 hrs 45 minutes covered at 350 then cook 30 to 45 minutes uncoved to brown......baste the turkey about every 30 to 40 minutes with natural juices....

When I get compliments and raves on my turkey here's my answer to how & how long I cook it:
Wash it in cold water,sprinkle with salt & let set a few hours or overnight in fridge,rinse well again. Next dry it w/paper towels (toss them) rub it down in olive oil, place in a roasting/baking pan toss in 1/2 teaspoon of rosemary & thyme,add a bay leaf or 2, & add a quart of water. I bake it overnight in 200-250 oven covered w/lid or heavy tin foil. Should let it cool down before slicing,will be moist when baked slowly and all the yummy flavors will be released.

In an oven bag @ 350 degrees; 2 to 2 1/2 hours for a 12 to 16 lb. turkey. (takes less time in an oven bag)
