You must be boiling them too much. You could always try steaming them first instead they tend to stay a bit firmer.

I use the same method, in fact I'm making them today. Only boil for 5 minutes then take the potatoes off the heat and drain.( Don't use salt in the water as this increases the temperature boiling point.) Then fill the pan with cold water and leave for a few minutes. Drain again, dry and use. If not using immediately drain again and put in cold water until needed. You may need to do this a couple of times as the hot potatoes will warm up the water. If you leave them standing in hot water they will continue cooking, this being why they collapse. Also boiling for too long will do the same.

Do not boil Them for more Than a few minutes leave in th water until cool, then remove and shake in a sieve this roughs them up. Make sure the fat is very hot before adding the potatoes.
While they are cooling you carry on preparing the rest of the food.

Make sure you don't par boil them for too long and use them in cooking immediately afterwards, or immerse them in cold water to prevent them from cooking further until they are ready for use.

DON'T BOIL FOR SO LONG MAYBE 7 MINUTES REAL TIME
THEN POUR THEM INTO A ICE BATH TO COOL THEM DOWN
to stop the cooking then drain them and then place in oven to finish cooking

check required boil time & before that time has expired ck. doness
stick toothpick in for doneness. Dont stir them too much. Allow to
settle or cool down before moving.

part boiled? well you obviously fully boiled them. boil them at a lower temp or for s shorter amount of time maybe.
