it`s yet not prepared, i just opened a pack of it, and it smells a bit like tomato or something like that, a very bit sour..
i am vegetarian since years, so i have not much idea how rough meat should smell.. now trying to cook for my boyfriend..
can anyone help please? i hardly want to poison him..

the expire date is actually 13 october..
(it´s not going to be eaten rough, it´s a base for some other hungarian dish, i was going to cook it..)

Ok.... firstly beef tartare is supposed to be raw. It should not be slimy, should not taste sour and should not smell rancid or like dead meat. Anything eaten raw MUST be absolutely fresh!

It should taste a bit creamy and tasty.

It should smell like raw meat. You don't cook steak Tartare. It's eaten raw. Here's a recipe

2 1/2 lbs. ground round or sirloin, trim and grind twice (butcher can do this)
4 tbsp. dry red wine
3 cloves minced garlic
3/4 tsp. Tabasco sauce
2 tsp. dry mustard
1 tsp. salt
1 tsp. hickory smoked salt
1 tsp. curry powder

After mixing all ingredients, refrigerate for 2 hours. Mound on a pretty plate and decorate the top with well-drained capers. Serve with thinly sliced rye or party rye. Chop fine hard boiled eggs and red onions. Put in bowls alongside.

Personally I wouldn't use the garlioc, I hate the stuff and the smell makes me sick but it's up to you. Also I wouldn't eat raw meat. I would rather have the sirtloin grilled.

I was going to say it smells sour and it's probably a little slimey. I personally wouldn't eat it raw.
