Really easy one this which is very satisfying! Chop one onion and one clove of garlic and fry gently for about 20 mins on a low-med heat until really soft and brown. use tinned beans, i usually go for a mix of berlotti, cannellini, chick peas and green lentils. drain these and add to the onions. Next add 2 tins of chopped tomatoes and a cup of water and stir together. If you want some meat then I add some bacon and sausages which i would brown in a separate pan first. once the beans and tomatoes have started to warm up add 2 heaped tablespoons of a barbecue sauce, a level teaspoon of black pepper, pinch of salt and 1 - 2 teaspoons of chopped red chili( I use the jars of ready chopped chillies-much easier and handy to have in fridge!) depending on how hot you like it. Transfer everything into a casserole dish and top with thinly sliced potatoes. cook in the oven for about 35-40 mins at 200.Potatoes should go nice and brown on top and beany mixture should be thick and yummy! This will serve 4-6 people, depending on how hungry they are!
Also, if you ever get too heavy on the chili, you can stir in a spoonful of real cocoa(NOT drinking chocolate) and it will remove some of the heat!!

Sausage and Bean Hot Pot
Serves 4
Prep time: 10 minutes
Cooking time: 25 minutes
1 OXO Beef stock cube
454g pkt low fat sausages
2 tsp olive oil
1 large onion, sliced
400g can chopped tomatoes
200g/7oz baby new potatoes, halved or quartered
400g can mixed beans, drained
Place the sausages under the grill and cook for 10 minutes, turning so they brown all over. Remove and set aside to cool a little
Meanwhile, heat the oil in a flameproof casserole and add the onion, cook for 5 minutes until softened and browned. Stir in the canned tomatoes, potatoes and beans, stir together. Crumble in the OXO beef cube and add 200ml/7 fl oz water.
Cover and simmer for 10 minutes.
Cut each sausage into three, then add to the casserole and cook together for 5 minutes more. Serve with crusty bread and a green vegetable.

Spicy Bean Soup
Ingredients :
1 1/2 cup dry navy beans
8 oz chorizo sausage remove casing
1 cup peeled carrots in 1" pieces - (2 medium)
1/2 cup coarsely-chopped onion - (1 medium)
1/2 cup chopped green sweet pepper
1/2 cup chopped red sweet pepper
1 x garlic clove minced
1 tbl chili powder
2 cup chicken or vegetable broth
1 cup water
Chopped green onion (optional)
Chopped tomatoes (optional)
Rinse beans. In a large saucepan combine beans and enough water to cover them. Bring to boiling; reduce heat. Simmer for 2 minutes. Remove from heat. Cover and let stand 1 hour. (Or, omit boiling and soak beans overnight.)
Drain and rinse the beans. In a 4- or 6-quart pot place beans, sausage, carrots, onion, sweet pepper, garlic, chili powder, oregano, chicken broth and water.
Over high heat, bring to a boil. Reduce heat to a low simmer for 2 hours.
Sprinkle with green onion and tomatoes, if desired.
This recipe yields 6 main-dish servings (7 cups).
Comments: Spicy chorizo sausage adds flavor to this white bean and vegetable soup.

SPICY BEAN AND VEGETABLE HOTPOT
ingredients
2-3/4 Tbs. olive oil
1 medium onion, chopped
1 clove garlic, crushed
1 Tbs. plus 1 tsp. curry powder
1 tsp. ground cumin
1/4 tsp. ground cardamom
1/4 tsp. ground nutmeg
1/8 tsp. ground allspice
1 small fresh red chilli, seeded and finely chopped
1 Tbs. plus 1 tsp. fresh ginger, finely chopped
1 Tbs. plus 1 tsp. flour
2 cups water
1 large vegetable stock cube, crumbled
2 medium carrots, chopped
2 medium potatoes, chopped
1/2 small cauliflower, chopped
9 ounces green beans, chopped
1 medium apple, peeled, chopped
1 lb. canned garbanzos, drained
2/3 cup plus 3 Tbs. plain yogurt
1 Tbs. plus 1 tsp. fresh coriander, chopped
1/4 cup chopped roasted cashew nuts
Cooking Directions
Heat oil in large heavy saucepan over medium heat. Cook onion 4-5 minutes, or until soft. Stir in next 8 ingredients and cook 1 minute. Add flour and stir over heat 2 minutes. Remove from heat. Dissolve stock cube in water and gradually stir into onion mixture. Stir over high heat until mixture boils and thickens slightly. Add next 4 ingredients. Reduce heat to low, cover, and simmer 10 minutes, or until vegetables are tender. Add next 3 ingredients and stir over medium heat until heated through. Do not boil. Serve sprinkled with coriander and nuts.
To calm it down reduce the amount of curry powder or simply add more vegetables to the mixture, in which case you'll have some over for another day!
