Capers
White wine
Salt, pepper
Extra virgin olive oil

Butter
Flour

Method
Annoint the fish fillet with crushed garlic, crushed or grated fresh ginger, olive oil, lime or lemon, and salt/pepper up to 3-4 hours.

Roll fillet in flour which contains black pepper to taste, about 1-2 teaspoons salt per cup.

Add 4-5 tablespoons olive oil to a frying pan and add about 2 tablespoons butter.
Heat, but not extremely hot (too hot and you will burn the butter)
Lay the floured fillet into the hot oil and cook each side 2-3 minutes or until lightly browned.

Remove the fish and add a few spoonfuls of capers. to the pan.
Cook lightly. Then add a half to one cup of white wine. Cook
until it deglazes the pan and thickens.

The pan sauce can be served over the fish. Add a mixed garden salad and you can have a meal fit for a king.

You can modify any of these recipes to your taste. They are all quick, fairly cheap, and can be very good.

I cook by taste, sight, intuition. You can do the same, and can seldom mess it up unless you dont watch it and let it burn.

Kirun has the right idea. If you make a large pan of vegetable stew, such as ratatouille, you can heat up a small portion in the microwave while you cook some rice or cous-cous on the hob. In fact cous-cous can be made by simply pouring boiling water onto it and letting it stand until the water is absorbed.

ratatouille is also very healthy and quite low in fat. I make it by frying a chopped onion, adding some sliced courgettes, a sliced red pepper and a sliced aubergine (fry for a bit), add a chopped garlic glove or half a teaspoon of garlic puree, pour in a tin or so of chopped tomatoes and a big teaspoon of mixed herbs (marjoram, thyme, parsley etc.), add salt/pepper, stir and cook for 20 mins or so.

Plop a portion on some rice and sprinkle cheese on top. Or add a poached/boiled egg (maybe cooked with the rice).

The aubergine is traditional but not absolutely necessary. The cheese/egg is not vital either, but desirable unless you are watching your weight :-)

The disadvantage of cooking a meat stew is that if you store and reheat it later, you may get an upset stomach.

Steak Sandwich

1 large strip, round, or shell sirloin steak, weighing between 12 ounces and 1 pound

1/2 t. coarsely ground black pepper

Salt to taste

2-3 T. oil

2 T. chopped onion

4 oz. crimini mushrooms, cleaned and chopped

1/2 t. thyme

1 loaf French or Italian bread, or 1 Vienna loaf

3-4 T. prepared mustard

Trim any excess fat from the steak. Sprinkle both sides with pepper and salt, then brush with a tablespoon of the oil. Heat a cast-iron or nonstick pan and sear the steak about 2 minutes on each side. Remove from the pan. Cook the onion for 2 minutes in the remaining oil, then add the chopped mushrooms, sprinkling them with the thyme and a little salt. Cook, stirring, until they have softened. If the mixture dries out, add a tablespoon or so of water.

Cut a large piece of bread about 1 inch longer than the steak. (If you're using a Vienna loaf, you may not need to cut it at all.) Slice it lengthwise through the middle, leaving an uncut edge as a hinge. Spread both cut sides of the bread liberally with mustard. Now place the steak on the bottom half and scatter the mushroom mixture on top. Fold the top half of the bread down. Wrap the sandwich in two layers of plastic wrap. Take a long piece of string and tie the sandwich up tightly as if it were a parcel, knotting the string in several places. Put the sandwich on a plate and place another plate on top of it. Now weight it down with either cans of food or a bowl filled with water. Leave it for 8 hours or overnight in the refrigerator or other cold place. When you rescue it from the weights, it will be firm and flat. For serving, unwrap it and slice it on the diagonal so you have several strips, each about 3/4 to 1 inch wide. Arrange these on a platter with a bowl of relish or chutney to accompany them

Risottos - made with almost anything as long as you have an onion to start with.

Omelettes - again, you can put almost anything into them, but as a special treat try smoked haddock and gruyere cheese.

Scrambled eggs - alone, with chives, with off-cuts of smoked salmon.

You can cook good bacon in a microwave - give it two bursts and pour off the liquid in between bursts. Then you have the basis for a bacon sandwich, a BLT, or the other day I made a splendid bubble-and-squeak with some potato/cabbage/onion mixture I'd found in the Reduced section of the supermarket, added chopped bacon, and fried ... delicious!

Just about any pasta dish - you can get instant sauces, or try something simple like spaghetti with peas and cream (add ham if you have it).

Hope that helps.

boil some pasta. Meanwhile, fry together some streaky bacon and a chopped leek, chopped garlic, pinch of chilli, chuck in some herbs, whatever takes your fancy.

When pasta is cooked, add the bacon and leek and stir in some cheese sauce.

stir fry some chicken, chilli, garlic with finely sliced carrots, and whatever other veg you fancy, mange tout or french beans etc. chuck in a pack of ready to wok noodles, add some sweet chilli sauce (I use nearly a whole botle) then add some sliced spring onions a the end just before serving.

Classic british stew is cheap and easy. Get some braising steak and chop, chuck in large saucepan with onions and garlic, fry it about a bit, add some stock, gravy granules to your taste, simmer for an hour. Add some chopped carrot, swede and parsnip. Add herbs, simmer til veg tender. Servce with boiled or mash spuds.

Cooking is easy, just experiement a bit.

You can make good stews and curries on the hob. My tip is to try using condensed soup as the base rather than just water - much tastier! Also, try alternatives to rice every time such as couscous.

I love making and eating casseroles. You can use the cheapest cuts of meat and throw practically anything in it. The secret is to cook whatever you have very slowly and for a long time. Try this : cuts of meat (whatever), onions, garlic (optional), red/green pepper, tin of soup to make the stock (in my case usually tomato or mushroom), mushrooms, carrots. Just add whatever is around! You must stir from time to time to prevent buring the bottom of the saucepan/casserole dish. Good luck!
