If I want to say "I am tall" in Spanish...do I say "Soy alto" or "Soy alta" ?

And also if I want to say "I am ready"..is it estoy listo or estoy lista ?

Well, that depends on what your birth certificate says about your gender

It depends on what sex you are. I think you're a girl, therefore for you to describe yourself as tall, you'd respond, "Soy alta." If you were a boy, you'd say,"Soy alto."

The same thing applies to "listo" and any Spanish adjective ending in an O. Therefore, to say I'm ready, you'd say, "Estoy lista." But your brother would say, "Estoy listo."

When the adjective ends with "a", it's feminine ... for females (if you are a girl you say: soy hermosa, soy alta, estoy lista, soy enamorada etc.)
