Nuggets are generally made fron "formed pieces of chicken" whic is basically a blend of scraps of meat that are compressed into a nugget shape.
A filet of chicken is generally a filet of a whole breast of the chicken, with no other meat added.
Some nuggets owever are made from breast meat only. and are usually labelled as such. If it has no lable stating it's breast meat, chances are it's "formed" chicken.

The difference between a chicken nugget and fillet is that the
nugget is formed with bits and pieces of chicken dark/white
meat including some chicken fat compressed in the its shape, whereas the fillet is wholly from the chicken breast minus the
fat and the skin.
