Ingredents:-

-1 kg mutton-cut into pieces
-1/4 cup ghee
-1 tbsp cumin seeds
-1bay leaf
-4 whole peppercorns4 cloves
-1/2 tsp fenugreek seeds-roasted and powdered
-1 tsp fennel seeds- roasted and powdered
-1 tsp ginger paste
-1 tsp garlic paste
-1 cup grated onions
-1/2 cup yogurt
-1 tsp garam masalasalt to taste
-1/2 tsp turmeric
-1 tbsp coriander powder
-1 tsp chilli powder
-2-3 green chillies-slit
-2 cups onions-sliced a little thick
-2 tbsp chopped coriander leaves-to garnish

Method:-

1) Heat the ghee in a heavy-based saucepan, and add the cumin seeds, bay leaf, peppercorns, cloves, powdered fenugreek and fennel seeds.
2) When the seeds begin to splutter, add the garlic and ginger paste and the onions. Saut?ver high heat till soft.
3) Increase the heat and add the meat pieces. Stir fry over high heat till pieces look opaque.
4) Lower the heat, cover and let cook till tender.
5) Add the yoghurt, stir-frying vigorously so that it blends well and does not curdle.
6) Cook till fat separates.
7) Add the garam masala, salt, turmeric, coriander and chilli powder.
8) Keeping the heat high, add the green chillies and sliced onions.
9) Continue cooking over medium heat, till fat separates.
10) The onions should be crunchy.
Serve hot, garnished with chopped coriander leaves.

20gms ginger-garlic paste

6 Cloves

4 Cardamoms

1 tsp. Turmeric

1 Cinnamon stick

1 tsp. Garam masala

1 tsp. Chili powder

1 tsp. Cumin seeds, ground

1 tbsp. Coriander powder

1 tbsp. Coriander leaves, sliced

4 tbsp. Oil

Salt according to taste



Method

2. Heat oil in a pan, slice the other onions , add to the oil and fry well. Also add mutton pieces and cook for 2-3 minutes till it is well browned on all sides.

4. Cover tightly and cook over a low fire till the mutton is tender and completely dry.
5. Than fry for a while till the Ghee(clarified butter) separates from the masala.

Ingredients

- 1.5 Lb Meat (lamb or goat)
- 6 Chopped Onion
- 1.5 Inch piece Ginger
- 12 Pods Garlic
- 2 Tbsp Red Chili Powder
- 4 Green Chili
- 5 Cardamom
- 1 Inch Cinnamon
- 8 Cloves
- 1 Tsp Coriander Seeds
- 1 Tsp Cumin Seed Powder
- 3 Tbsp Yogurt
- 1 Tsp Turmeric powder
- 1 Tsp Sugar
- 6 tbsp Ghee
- 1.5 Tsp or to taste Salt

Instructions

1. Clean and wash meat

2. Grind all spices from ginger to turmeric powder Marinate the mutton with the masala paste. Add sugar and salt and keep aside for 30 minutes.

3. Heat ghee (cooking oil). Add chopped onion and fry till light brown.

4. Add marinated meat and cook for three minutes. Reduce heat and cook in low heat for about thirty minutes with occasional stirring till oil starts separating out.

5. Add little water and cook if meat is not tender. Serve hot.
