Butter is definitely not a good substitute, as it is a fat and apple butter is not.

You can use applesauce, but let some of the water drain out of it for about ten minutes by putting it in a very fine seive (you will need to put more in the seive than you will need in the recipe as you will lose volume). You may need to add a bit more flour (up to about 1/2 cup) to the recipe later on if the batter is too moist.

Apple butter is also a bit spicier than apple sauce, so you might want to throw in a 1/2 tsp of cinnamon and/or nutmeg.

In future, if you want a good definition of ingredients so that you can work out substitutions, check out www.epicurious.com and their food dictionary.

Good luck with the cake!

I would not, applesauce and butter are a of different consistancy than apple butter. Apple butter is available in the grocery stores right now, you will find it in the jelly section. And apple butter has spices in it, the other two do not necessarily have flavorings.
And if you have some left after you bake the cake, it is great on bread!

no. apple butter is a completely different consistency. I've never made carrot cake, but apple butter is kinda like apple sauce, only more jam-like.

no. apple butter really isn't butter at all. it's kind of like a jelly or applesauce. you can substitute applesauce in the carrot cake and add some more cinnamon and cloves.
