What I've been doing lately is grilling 2-3 chicken breasts on sunday and keep them in my fridge for the week. I can slice one and put it in some pasta with sauce, on a salad wth dressing, make a sandwich, or throw together some chow mein or fried rice. Makes things a no brainer and is super easy, and chicken is a great source of lean protein.

You can cook this on the stove but I personally throw everything in the slow cooker in the morning and it's done when I get home. Super Yummy!
2 1/2 cups water
1 teaspoon lemon pepper seasoning
1 teaspoon ground cumin
1 tablespoon olive oil
4 boneless skinless chicken breast halves, trimmed of all excess fat
1 clove garlic, finely chopped
1 cup chopped onions
2 (8 ounce) cans white shoepeg corn, drained
2 (4 ounce) cans chopped green chilies, undrained
1 teaspoon ground cumin
2-3 tablespoons lime juice
2 (14 ounce) cans great northern beans, undrained
shredded monterey jack cheese, to garnish
In a 5-qt stockpot, combine water with the lemon pepper, 1 tsp ground cumin, and olive oil.
Bring to a boil.
Add the chicken breast halves and return to a low boil, then reduce the heat to low and simmer 20-30 minutes or until the chicken is fork tender and the juices are clear.
Remove the chicken from the broth and cut into bite-size pieces, then return it to the broth.
Add the garlic, onion, corn, green chiles, 1 tsp ground cumin, lime juice, and Great Northern beans to the broth.
Bring to a boil.
Simmer until thoroughly heated, about 45 minutes.
To serve, ladle into soup bowls and sprinkle cheese on top.

bake a potatoe, cut in half...scoop out the insides[don't break the skin]. put potatoe insides into a bowl. add any of the following [whatever combinations look good to you]...grated cheddar cheese, salsa, brocolli,bacon bits,sour cream, cream cheese, green onion, peppers, use your imagination...you can make it as healthy or unhealthy as you want...potatoes are very good for you...it's what you put on them that makes the difference!!!mash the mixture together then whip with electric beater, replace in potatoe skins reheat in 425 degree oven for about 20 minutes. ENJOY!

Cood a box of small pastabshells
Add
cut red, yellow and green peppers
cut snap peas
sliced carrots
sliced radishes
sliced mushrooms
sliced celery
sliced cucumber (small slices)
Sliced strips of dry salami
1/2 bottle of balsamic Italian dressing
1/2 cup of parmasan cheese

shepard's pie~ brown you some hanburger meat drain and add one of whole corn and a can of peas and carrots and mix pour into a casserold dish and top with mashed potatoes(cooked) and spread over the top like cake icing be genorous and then top with cheese and bake until cheese is melted and it is half way healthy b/c of the veggies and you also have your meat and potatoes all in one dish ~~Bon appetite ohhh yeah it is also quick and easy ~CHEF ABBY

I like to bake a boneless chicken breast, or more if you have family...And then make a salad and add the baked chicken cut up in cubes. It's easy and healthy.... You can add all your favorite vegatables....and some cottage cheese. And even some crackers...

I like to boil potatoes and fresh green beans together, and then make some hamburger (ground beef) patties to go with them. I put butter on the potatoes and green beans, and salt/pepper, then hot sauce. I put Dijon mustard on the burger patties, and have buttered bread with all of that. Yummmmm!

bagged salad, and put some grilled chicken pieces on top. Top with some cheddar cheese, and ranch dressing. Very easy.
