any really good recipes would be appreciated.

This is a traditional Maltese recipe
Serves 5

1 rabbit chopped
2 carrots diced
1 large onion diced
1 glove garlic
1 glass red wine
4 potatoes
2 bay leaves
some peas frozen or tinned
1tsp curry
3 tblsp oil
1 tin tomato juice
1pkt knorr oxtail soup

Method.
Warm oil in pan. Chop rabbit into desired pieces. Add to pan then add garlic. Fry till rabbit is slightly brown. Empty contents into larger pot, add curry, bay leaves, wine, potatoes, chopped and diced carrots, onion, cook for about 5 mins. Add wine, tomato juice. Dilute oxtail soup in half a pint of water then add to stew continue to simmer for about 1 hour or until rabbit is tender. Should start to come off the bone add peas if tinned if frozen add with carrots at the beginning. Leave to simmer for 5 mins then serve. If you prefer the stew a bit thicker add 1 tblsp corn flour mixed with water to the stew. This will help thicken the stew.
Can also be used as a spaghetti sauce. Absolutely Delicious

I don't have a recipe exactly, it's just something I used to make when my kids were home. Joint the rabbit and saute in some oil, put in casserole dish, fry some bacon (about 6 ozs) chop and add, fry onions (2) and add, prepare carrots and any other veg you like and add to the dish. Make a gravy with a chicken stock cube or powder and a tablespoon of flour and 3/4 pint of water. (or use tinned stock and flour, cover and put in oven at 350 degrees F (or 175Celcius)
Make some dumplings with:- 4 ozs self raising flour.
1 oz butter or other fat.
Pinch of pepper.
Herbs, mixed.1/2 teasp.
A few tablespoons of water to mix.
Roll dumplings into golfball sized balls and place on top of rabbit casserole 1/2 an hour before it has finished cooking,.(The whole casserole takes 1 1/2 hours to cook, so put them in after it's been cooking for an hour.)Make sure there's still plenty of gravy in the casserole before you put them in, add a little water if it's evaporated too much The dumplings need to sit on gravy to cook right.
