Has anybody ever froze their tomatoes? I have a lot left over and not enough time to get them canned. I was wondering if I could freeze them and make salsa later.

Blanch them first. Boil them for 3 minutes and then immediately immerse them in ice water. My mom does it every year.

i have found about the only decent way is to cook the tomatoes and cook down to a nice thick sauce and strain thru a sieve and put in small baggies and use for sauces.....i found by blanching them and freezing i end up still having to cook them down after they have been froozen and my way takes up less space and i have some nice tasting sauce........you can put them on in the morning in crock and finish when you get home......i even make some of the sauce into ice cubes and if i am making a gravy or a dish i can add a couple of tomato cubes...after they are frozen i take them out of the trays and put in baggies then you can use how many you need ...just to give a hint of tomato taste.

I freeze topmatoes from the garden all the time. nOTE they will only be good for cooking 7 making salsa as it does change their texture.
I just wash them, 1/4 them if they large & pop them in a Freezer bag..in to the freezer. They'll peel perfectly by running hot water over them as you defrost them. Skin slips right off.

I have frozen tomatoes, but I chopped them before freezing and added them to spaghetti sauces and soups etc. when defrosted. (They just crumple into a squishy mess if you freeze them whole!)
Or make tomato ketchup, home-made is delicious. You could put them in the blender now, freeze them and make your sauce when you're ready. Or.....

Recipe for Red Tomato Jelly
--------------------------------------
2 lbs ripe tomatoes
1/2 a pint of water
Sugar
Lemon

Chop tomatoes, simmer in the water until a smooth pulp
Strain through a jelly bag
To each pint of the juice you get, allow 1 lb sugar and juice of 1 lemon
Stir until sugar has dissolved
Boil until set
(You can add spices to taste if you feel a bit adventurous!)

Blanch them and peel them. Great for chili, spaghetti sauce, soups , etc. I freeze them in small containers. Better than buying grocery store canned tomatoes, because store ones all have too much salt.

Send me some of your extras, I have room in my freezer and I don't have a garden!!!

You can cut them in quarters, put in freezer bags and put in freezer. The skins will be on them so you will then have to strain or put through food processor or juicer or a good blender when you thaw them out. Unless you have time to remove skins and then freeze. They are just as good to me as canned.

I freeze tomatoes every summer....wash them...cut them up...throw them in a ziplock bag...freeze...I use them for spaghgetti sauce, stew, goulash etc...I havent made salsa from them...I've always used fresh...but they are great for cooking purposes
