This is a good question, needs to be taken a little further though.

In this time of health scares from the medical profession we are told to eat less. That means of everything, but, especially of salt, sugar, fat, at the same time we are expected to give up smoking as well.

Now in a conversation with my doctor I raised this issue. 'Doctor' I said ,'why is it that all these natural preserves are bad for me' ?

He was at a loss to explain.

well its a natural preservative used to preserve meat when humans didn't have refrigerators or freezers. it also helped to cover up the smell and flavour of stale meat when meat was a little off.

Why? salt helps kills bacterial that cause food to spoil.

way? cures, brines, salt packing, etc.
