Shrimp Scampi

Yield: 4 servings
2 lb Raw shrimp medium /shell 4 Cloves of garlic
3 T Olive oil 1/4 t Paprika
3 T Butter 1/4 t Parsley
Shell all the shrimp.
Place the butter and the oil into a large skillet and melt (med-hi
heat).
Crush the garlic into the pan, and stir it around (keep it moving!!).
Add the Shrimp to the skillet and keep them moving. Cook until the all
go from translucent to white or pink then remove from the heat. DO NOT
Over cook them.
Add parsley as a garnsh. Serve over white rice or pasta.

Here's a really yummy recipe I tried and everyone loved :)
Shrimp Scampi
Vegetable oil
1 tablespoon kosher salt plus 1 1/2 teaspoons
3/4 pound linguine
3 tablespoons unsalted butter
2 1/2 tablespoons good olive oil
1 1/2 tablespoons minced garlic (4 cloves)
1 pound large shrimp (about 16 shrimp), peeled and deveined
1/4 teaspoon freshly ground black pepper
1/3 cup chopped fresh parsley leaves
1/2 lemon, zest grated
1/4 cup freshly squeezed lemon juice (2 lemons)
1/4 lemon, thinly sliced in half-rounds
1/8 teaspoon hot red pepper flakes
Drizzle some oil in a large pot of boiling salted water, add 1 tablespoon of salt and the linguine, and cook for 7 to 10 minutes, or according to the directions on the package.
Meanwhile, in another large (12-inch), heavy-bottomed pan, melt the butter and olive oil over medium-low heat. Add the garlic. Saute for 1 minute. Be careful, the garlic burns easily! Add the shrimp, 1 1/2 teaspoons of salt, and the pepper and saute until the shrimp have just turned pink, about 5 minutes, stirring often. Remove from the heat, add the parsley, lemon zest, lemon juice, lemon slices, and red pepper flakes. Toss to combine.
When the pasta is done, drain the cooked linguine and then put it back in the pot. Immediately add the shrimp and sauce, toss well, and serve.

SHRIMP SCAMPI
* 10 large shrimp
* salt and pepper -- to taste
* 1/4 cup butter
* 3 large mushrooms -- thinly sliced
* 2 shallots -- minced
* 2 cloves garlic -- minced
* 3 tablespoons green onion -- diced
* 1 tablespoon sherry
* 1/4 cup whipping cream
* OR half and half
* 1 teaspoon chopped parsley
Season shrimp with salt and pepper.
Saute in butter, heating to about 350F; turn shrimp when pink. Add mushrooms, shallots, garlic, and green onion; saute about 4 minutes.
Add sherry and simmer 1 minute. Add cream; shake pan until sauce is thickened.
Garnish with parsley.

Tyler's Ultimate on the FoodNetwork.com. He fixed Shrimp Scampi on his program on Friday (10/5/06) along with Grilled Broccoli that looked fabulous and some delicious looking carmelized onion garlic bread.

Shrimp Scampi
1 cup white wine
1/2 cup unsalted butter do not use margarine
3 teaspoons minced garlic
1 lb. shrimp, peeled and deveined
Bake at 350-degree oven for about 6 to 7 minutes. Be careful not to overcook the Shrimp.
Serve on bed of cooked rice.
