Sura 2:65-66 and Sura 5:60 contain references to Jews as “apes and swine to be despised and rejected.” (Think of that! You can be sure that such a statement did not come from the true God of this universe who selected the Jews to be His Chosen People.)

The "Chosen People" of God are those who follow Him and His guidance. The Jews were the first such people.
The Christians became the "Chosen People" when Jesus appeared on the scene, so have become the Muslims when God renewed his message to mankind through the Archangel Gabriel, to Muhammad (PBUH) in Mecca.
This is God's path. This is what God (SWT) has done...

I don't see the connection ...!
Your scientists have been arguing for years that not only Jews, but ALL humans descended from apes, and I did not hear you arguing against that. So is it easy for these scientists to justify their false evolutionary claim, but hard for the Great Creator to change His creatures from one form to another !!
Second of all, sons of Israel were chosen by God only at a certain time because most of the prophets were sent to them (i.e Prophet Josepf, Jesus, Israel,..etc), but they were then cursed after they refused to worship God and continued to kill HIS prophets.
These are nothing but lessons for us to know the Greatness of God.
