If you are baking people often substitute an equal amount of commercial applesauce (mussleman's for example) for the vegetable oil. All the other oils mentioned by people are "vegetable" oils except for the mineral oil which while digestable might give you diarrhea!

Melted butter or lard etc would probably work but they are generally considered less "healthful" at least for most people.

Canola oil is what I have used in place of Vegetable oil. I didn't notice a difference in the way the cake tasted or in the way fried chicken tasted. Olive Oil, although healthy has a slight olive taste to it and I wouldn't recommend it for baked goods.

Has anyone suggested extra virgin olive oil? It's the good oil and works just as well as vegetable oil minus the bad fat. You can also use lite smart balance or regular smart balance for your stir fry meals.

That would depend entirely on what you were using the vegetable oil for.

Besides the mineral oil, they're all made from vegetables.
If you don't want vegetable oil, try LARD. It's very tasty but not too healthy.

Canola or light olive oil are good healthy alternatives. I usually use the light olive oil.
