According to Dunan Hines, Duncan Hines Layer Cake mixes perform best if used within two years of the manufacturing date. This time frame is only a guideline. If stored in a cool, dry area the product will remain fresh longer. Older mix is not harmful in any way; however, the leavening ingredient is affected by age, and the product may not rise properly. I would imagine that the two year guideline could be extended to any major name-brand cake mix.
If your cake mix does not have a definite expiration date printed on the box, you can visit the following websites, depending on you brand, and decode the series of letters and numbers to figure out the manufacture date...and then add two years to that date.

I mix 2 cake mixes together all the time when I am baking a huge cake. Sometimes you have to especially if you're doing a big sheet cake or a wedding cake. You will have to allow more time. I don't usually set a timer, but just watch it closely. It will probably take around an hour to cook two cake mixes. My advice would be to turn down the temp. at least by 50-100 degrees than what the instructions say for larger cakes. This way the outside of the cake doesn't get burnt while the middle isn't done. You can contact the manufacturer to be sure. The manufacturer should have a website printed on the cake mix box. Or, you can call your local county extension agent (if your county has one). County extension agents answer questions about food, gardening, and other aspects of home economics.

I for one would'nt keep one for no longer than about a couple of months because there are bug eggs in all flour and more so in corn flour so to keep fresh longer keep in frig. P.S. yes you and all of us have been eating them since the begining of time and are you dead yet? The acid in our guts kill and destroy everything you put in it.
