Overnight is no problem if they are peeled and in water. In fact I cut them into fries and can use them for a few days.

You shouldn't store potatoes in the fridge. Store them in a dry cool place. They'll last a lot longer.

I don't keep them in the fridge--I keep them in a "potato" drawer inmy kitchen.
As long as they're not mushy & rotten they'll be good.
