Easy Pancake Recipe
Ingredients


1/2 cup milk (or buttermilk)
2 tablespoons butter or margarine (melted)
1 egg
1 cup flour
1/2 teaspoon baking soda
2 tablespoons sugar
1/2 teaspoon salt
Mix the milk, butter and egg in a bowl. Combine the flour, baking soda, sugar and salt and add them all at once to the first mixture. Stir until just moistened. Lightly butter or grease a griddle or frying pan and set over moderate heat until a few drops of cold water sprinkled on the pan form skittering globules. Pour about 1/4 cup of the batter (per pancake) onto the griddle. Cook until bubbles form on top and the undersides are lightly browned. Turn with a spatula and brown the other side. Place finished cakes on a heated plate in a very slow (200°) oven until ready to serve. Top with strawberry jam, fresh strawberries, or strawberry syrup.

Mapple Pancakes

DIRECTIONS

Pour batter by 1/4 cupfuls onto a lightly greased hot griddle; turn when bubbles form on top of pancakes. Cook until second side is golden brown (pancakes will be thin).

Eggnog Pancakes with Cranberry Sauce

2 C Pancake mix
1 Egg
1-1/2 C Eggnog
1-1/2 tsp Vanilla extract
pinch Ground nutmeg
1 can (16 oz) Whole-berry or jellied cranberry sauce

Place pancake mix in a bowl. In another bowl, whisk egg, eggnog, vanilla and nutmeg; stir into pancake mix just until moistened.

Pour batter by 1/3 cupfuls onto a lightly greased hot griddle; turn when bubbles form on top of pancakes. Cook until second side is golden brown. Serve with cranberry sauce. Yield: 6 servings (12 pancakes)

Lemon-Ricotta Pancakes
Serve with raspberry sauce.

1 cup ricotta cheese
1 cup milk
3 eggs, separated
1/4 cup sugar
Zest and juice of 1 lemon
1 1/2 cups cake flour
1 Tbs. baking powder
1/4 tsp. salt

In a large bowl, whisk together the ricotta, milk, egg yolks, sugar, lemon zest and juice until smooth. Sift together the flour, baking powder and 1/8 tsp. of the salt over the ricotta mixture and stir with a wooden spoon until just combined.

In another large bowl, using a whisk, beat the egg whites until frothy. Add the remaining 1/8 tsp. salt and continue beating until soft peaks form. Using a rubber spatula, fold one-third of the egg whites into the ricotta mixture, then gently fold in the remaining
whites.

Preheat a griddle over medium heat. Spray the griddle with nonstick cooking spray. Ladle 1/3 cup batter onto the griddle for each pancake. Cook until bubbles form on top and the pancakes are golden underneath, 1 to 2 minutes. Flip the pancakes and cook for 1 minute more. Transfer to a warmed plate. Repeat with the remaining batter. Makes 12 to 14 pancakes.

This is more like peach pie.

Baked Peach Pancakes

1/4 cup butter or margarine
1 cup Original Bisquick mix
3/4 cup milk
4 eggs
2 medium fresh peaches, peeled and thinly sliced or 1 1/2 cups canned or frozen (thawed) sliced peaches, drained
1/4 cup sugar
1/4 teaspoon ground cinnamon

Heat oven to 400ºF. Place 2 tablespoons butter in each of two 9-inch pie plates. Heat in oven until melted.

Stir together Bisquick, milk and eggs. Arrange half of the peach slices in each pie plate. Divide batter evenly between pie plates. Stir together sugar and cinnamon; sprinkle over batter.

Bake 20 to 25 minutes or until puffed and golden brown.

I learned a neat little trick from my dad years ago. When mixing the batter, use soda water... you know... carbonated instead of tap water. It makes the pancakes extra light and fluffy. Mmm... If it wasn't Saturday night I would make some right now!

reading what everyone wrote you still cant get one with no fillings here......1 cup milk 2 tbsp oil 2 eggs 2 cups of flour 3/4 cup sugar... 1/2 tsp baking soda...1 tsp baking powder...1/2/tsp salt.....1 tsp vanilla....sift the dry ingredents together than add the liquid careful not to overmix it is ok to have small lumps in mix they cook out by not overmixing the cakes will be tender.........

pumpkin pancakes, blueberry, chocolate chips, apple cinnamon, banana all great pancakes
but try busquick with buttermilk and cinnamon and sugar and then add oil to the mix and that should make it creamy and tasty

a few years ago i made the mistake of reaching into the refrigerator for cream (which i love in place some of the milk) and i actually poured in a desired amount of vanilla coffee creamer, after the first bite, i skipped using syrup, it stood alone.

Use your regular pancake mix & add a 1/2 cup pecan pieces & a sprinkle of cinnamon.....Serve with applewood bacon & warm Canadian maple syrup......Yummy!!
