Why does she not take them out?
Gently explain you are worried that they might slip around behind her eyes if she leaves them in while she sleeps. That should scare her enough to take them out.
If she has any problem with taking them out she should go back to the opticians straight away so they can help her.

If she persists, I would hide the contact lenses she is obviously not mature enough to have them.

Alright, first of all, bring her to an eye doctor!!!

Although it's recomended you only keep contacts in for short periods of time many new soft contacts are completely safe to leave in for up to a week - not that that's recomended. New contacts breath very well and aren't bad for your eyes.
So, how long has she been leaving her contacts in? The main risk of leaving contacts in is that it will dry out your eyes. If this is the case just leave the contacts out for a while, wear glasses, use eyedrops.
Infection is unlikely for just leaving the contacts in over night for a day or two. It's more likely if the contacts have been worn longer then the recomended time and have torn or gotten really dirty through not being cleaned well. Eye infections are easily treated with prescription eye drops but you need to see an eye doctor. If you leave it untreated you can damage your vision, get cataract, etc.

Basically, your grandaughter probably just has irritated eyes and will be fine if she stops wearing her contacts for a little while. There's no reason to wear them so much, so stick to the recomended amount of time and clean the contacts well after each use. Don't keep the disposable contacts longer than recomended either.
However, assuming you have insurance, you should definitely take her to an eye doctor. It wont take a long time and he'll be able to tell if you've done any damage. He may also be able to give you samples of eye drops to moisten her eyes. It's also possible that you're granddaughter is not wearing her contacts correctly and he'll be able to talk to her about that. It's really worth your time.

She has probably got an infection - conjuntivitis is the most likely one, she will need to take her contacts out and have a course of eye drops - during this time she will need to wear glasses she must NOT wear her contacts.

She needs to realise that wearing contacts is a big responsibilty and requires alot of maturity as the hygiene of her eyes is just as important as looking after any other part of her body. If she cannot do that then maybe she should stop wearing her contacts until she is mature enough to look after her eyes properly as this CAN lead to her eyesight deteriorating

If the problem doesn't go away 1-2 hours after the contacts were removed, call an eye doctor immediately. This is nothing to wait and see about. With help she should be fine, but if this is the wrong type of infection, she could go blind.

Don't throw away the contacts, or the solutions she used. They may help identify the infection.

If it is because she won't wear her glasses then explain that if she carries on she will be given no choice by her optician as he will not prescribe lenses anymore. Also, red, puffy, swollen eyes are not a good look. I wear contacts and they should only be worn for 8-10 hours per day with 1-2 contact lens free days per week. If she is not responsible enough to wear them correctly then maybe you could have a word with her mum or dad, explaining your concern and suggesting they take her to the opticians urgently who will spell it out to her in no uncertain terms.

your grand-daughter should take her contact lenses because, the contact lense could break in her eye and damage her eyes and then she might not be able to wear contact lenses again and have to wear glasses.

Also she could have a eye infection, her optician sould be able help her with puffish of her eyes.
