Amount/Measure/Ingredient:
4 tablespoons sugar
1/2 cup water
4 egg yolks
1 tablespoon sweet Marsala wine (+) 2 tablespoons for the espresso mixture. Use the best you can buy!
4 ounces cream cheese
6 ounces mascarpone cheese
8 ounces heavy whipping cream, whipped
2 cups espresso or strong coffee
1 ounce dark rum
2 tablespoons sugar
24 French-style ladyfingers
2 tablespoons powdered sweetened cocoa mix
2 tablespoons grated semi sweet chocolate
Preparation:
Cream Mixture: Cook sugar and water together until it reaches a temperature of between 234° and 240°F on a candy thermometer, this is the soft-ball stage. At the same time, in an electric mixer, prepare egg mixture by whipping the egg yolks on high speed until pale yellow and thick, then slowly pour in the sugar syrup while mixing on high until the mixture is light and fluffy, Be sure to scrape down the sides of the bowl. With mixer on medium speed, add cream cheese and whip until smooth. Add mascarpone and Marsala. Mix until incorporated. Fold in whipped cream. Refrigerate.
Espresso Mixture: To prepare espresso mixture, combine espresso, additional Marsala, dark rum and sugar. Heat to 140 degrees F. then let it cool completely before using it.
To assemble, dip ladyfingers in espresso mixture. Place one layer of dipped ladyfingers on bottom of serving platter. Top with one layer of cream mixture. Add another layer of dipped ladyfingers, topped with a second layer of cream mixture. Sift cocoa over top.
Refrigerate for 2 hours before serving.
Sprinkle with grated chocolate.

Deep Dish Mocha Tiramisu
Servings:12(Served in glasses)
INGREDIENTS
3/4 cup Sweetened Condensed Milk (NOT evaporated milk)
1 (18.25 ounce) package chocolate cake mix with pudding
1 cup water
2 large eggs
1/2 cup vegetable oil
1/2 cup coffee liqueur
Creamy Coffee Filling (recipe follows):
1/4 cup Sweetened Condensed Milk (NOT evaporated milk)
1 (8 ounce) package cream cheese, softened
2 tablespoons coffee flavored liqueur
1 1/2 cups whipping cream, whipped
Espresso Sauce (recipe follows):
1/4 cup boiling water
1 tablespoon instant espresso coffee
1 (14 ounce) can Sweetened Condensed Milk (NOT evaporated milk)
1/4 cup butter or margarine
DIRECTIONS
Preheat oven to 350 degrees F. Grease 2 (8-inch) round cake pans.
In large bowl, beat 3/4 cup EAGLE BRAND®, cake mix, water, eggs and oil on low, until blended. Pour half of batter into each prepared pan. Bake at 350 for 25 to 30 minutes. Cool in pans on wire racks 10 minutes. Remove from pans, cool. Slice each cake into half (making 4 cake layers). Prepare Creamy Coffee Filling and Espresso Sauce.
Brush each layer evenly with liqueur. Place 1 layer in a 4-quart trifle dish or bowl; drizzle with 1/3 of the Espresso Sauce top with 1/3 of the Creamy Coffee Filling. Repeat procedure with remaining cake layers, ending with cake layer. Garnish with chocolate-covered coffee beans (optional) or confectioners sugar. Chill. Store covered in refrigerator.
Creamy Coffee Filling: In large bowl, beat first 3 ingredients until well blended. Fold in whipped cream. Chill, if desired.
Espresso Sauce: In small saucepan combine water and espresso; bring to a boil. Reduce heat and stir in EAGLE BRAND®. Over medium heat, cook and stir until mixture comes to a boil. Remove from heat; stir in butter. Cool.
