Remember to wash your Pinon (pine nuts) before you do anything else.

There are lots of different methods for roasting pine nuts. A few roasting methods are as follows:

1 - Wash them in a strainer. Preheat your oven to 350.

2 - Spread the nuts out on a baking pan.

3 - Sprinkle lots of salt (salt always optional) on top of the wet nuts. (Some people let them sit in super saturated salt water for many hours then let them dry somewhat before the roasting... the extra water effects the time roasting the pine nuts.) Foil covering is optional.

4 - After 35 - 40 minutes the color of the pinon nut kernel inside the shell will change from white to translucent. (the aroma will tell you) Then The color begins to change from translucent to the slightest hint of creamy butterscotch;

5 - START TASTE - TESTING. You might want to turn the oven off at this time... they are minutes away from being ready. Taste test one or two pinon nuts every 2 minutes. Keep watching the color change of the kernel inside the shell. Be prepared to take them out immediately... a few minutes more in the oven past this time will burn them... if they are already past the light creamy butterscotch color (now tan brown mocha or whatever you want to call light brown) while still in the oven... place them in the freezer quickly, the nuts will cook long after they are removed from the oven and will burn themselves unless placed in the freezer. I test every 2 minutes after they have cooked for 30 minutes. After roasting they are a creamy light butterscotch color tan light peanutbutter color.
The roasting time and temperature required will depend on how much moisture is still in the nuts and the altitude you are cooking in. In the high desert, it takes me longer to cook everything at altitude. Fresh early season nuts: The earlier in the season you buy, the more moisture. The more moisture, the longer the pine nuts take to roast.
