It should say on the packet what the material is. Most sausages are in intestine, which is edible, some varities use a kind of plastic version that you'll need to remove. I have no idea what the veggie "sausages" use.

Good quality sausages use animal gut, some use lamb, some use pork. Crap sausages normally use a skin to suit synthetically made.
Fresh skin is bought in a roll heavily salted, wash and soak the salt out and leave the skin to soak for a while to mke it more maleable.

its still lamb intestines i know this as i see them processed daily where i work there are synthetic ones but in the main its lamb intestines
