What is the worst thing that could happen if something goes a few hours over the required time in a crock pot? Will the roast or corned beef get more tender or tough? I add a sufficient amount of liquid every time I use the crock pot for recipes. Just in case.

It is in fact possible to overcook/burn if you do not add sufficient liquid. However, by adding TOO much liquid you can have a really bland end product. Typically most "slow-cooker" recipes call for a cup to 2 of liquid for a typical roast.
As to whether it would be tough or not; that is determined by the cut of the meat you use. The more "marbleing" the more tender the meat although cooking a roast for, say, 10 hours will usually give up a pretty tender peice of meat regardless of the marble.

The worst thing that can happen if you over-cook in a crock pot is that some things get mushy if left too long. This is particularly true of vegetables. Meats just get more tender as time goes on as long as there is sufficient liquid in the crock pot.

Unless it has a lot of dairy, I don't think you can screw it up. I never even time my crockpot dishes. Just turn it on in the morning and it's always tender by dinnertime. You're doing the right thing with the liquid. The more it cooks, the more tender it will be!

Untrue. Once the moisture is gone it will begin to burn. 12 hours is the max. And have you ever seen Nacho cheese after 4 hours in a crockpot? Might just as well throw it out then save it.

i'm pretty sure you're fine if the crock pot is functioning properly, but please check it because my friend's caught on fire a few months back. so her food was definitely overcooked.

seriously though, your food will be fine and probably even more tender. beware of mushiness, though.

i think it is possible to overcook something in a crock pot...it will prolly get more tender and dryer if it is left cooking

the meat gets dry an if u really cremate it, itl burn.

you can over cook veggies....they turn into mush!
