Obviously, the size is the main difference most people see. However, true Belgian waffles use yeast in the batter rather than baking powder. This makes the Belgian waffle lighter and fluffier than a traditional waffle. Also, Belgian waffles are more often served with fruit and in deserts, than with the traditional waffle. Belgian waffles are more versatile -- they're seen in many different meal courses...not just breakfast.

The Belgium Waffle Iron has deeper and thicker squares that the traditional. Honestly, I prefer the regular square waffle to the ritzier Belgian. I also do not care for the round or other shaped waffles. I guess I am a traditionalist.

Also, the batter for traditional waffles is completely different than that of belgian waffles. I have family thats from Belgium and I have toured Belgium as well. Belgian waffle batter is more like dough and can sit on its own. Whereas traditional batter is more liquidy and must be contained in a bowl, etc. Belgian waffle batter has the consistency of more like a bread dough or cookie dough. Traditional waffle batter is more like a cake batter consistency, runny. I hope this helps!

The Belgium Waffle requires a special waffle iron to create deeper pockets. The batter for the Belguim waffle is also different than a regular waffle batter.

KRUSTEAZ is a good brand for these sorts of waffles and cooks fantastic. Check your pancake/syrup section of your grocer for this or in the gourmet and international section.
