She would be your second cousin if she is your mom's cousin. I called all my mom's cousins "Aunt". But don't worrie about it, no matter what she is family and it won't matter what you call her.

she is your cousin to. a cousin is just a cousin nothing really changes. just like if you and your brother or sister had a child they would be cousins

Second cousin. So you'd probably address her by her first name. However, if she was a LOT older than you, I would personally call her by Mrs/Ms. Last name.
