I don't have a deep fryer so I usually fry them on a pan quickly in about a 1/4" of oil. They come out pretty greasy. What if I put them in the oven afterwards, would that dry them out a bit?

You don't need a deep fryer. Use the largest heaviest pot you have and fill it deep enough so the eggrolls with be completely submerged, but not so high that you can have oil boil over. Use a thermometer and get the oil up to around 365-375 degrees. If the oil temp is too low, the oil will seep into the eggrolls and make them greasy. If it is too high, they will burn on the outside and the inside will remain raw. I like to use a spider - long handled chinese tool that allows oil to drip out while picking up hot oily things - to fish food in and out of the pan. Only fry three or four at a time. If the pot is too overcrowded the oil temp will drop and you will have greasy eggrolls. After taking them out, place them on cookie sheets with raised metal racks so the oil drips away from the eggrolls. Good Luck.

Instead of frying the eggrolls, you brush the egg rolls with warmed sesame oil or regular oil, place on a non-stick baking pan (seam side down) and bake at 400 F for about 20 minute or until golden & crispy.

my mom makes eggrolls and they turn out delicious. incidentally she also doesn't have a deep fryer so she doesn't use a lot either like 1/4" or so. just make sure the oil is nice and hot, they should make that sizzling sound the moment it gets in. also the paper towel after works well too.

Make sure your oil is nice and hot. If it's cooler than the eggroll will just soak up the oil. Make sure you after you take the eggroll out of the oil you place it on a paper towel to soak up any extra oil.

I suggest if you don't have a deepfryer, to go ahead and use a deeper pot and deepfry in there.

I usually do all the cooking in the oven with a non stick spray - they come out crunchy, and not greasy at all.

I put them on a baking sheet and spray them with cooking spray. The texture is a little different than fried, but still very good.
