Both over the air (radio) and in the signalling between exchanges there is error detection. This is done using Cyclic Redundancy Check (CRC) on a block of data. The CRC algorithm is specially designed to maximise the probablility of detecting the error. It's a bit like a checksum.

If you want to know exactly what GSM uses, then the whole set of standards for GSM are available online. (www.3gpp.org). Warning though - there are hundreds of specs each many hundreds of pages long. Not sure which one has this info in.

CRC is not the only coding used. Typically, CRC is used on a packet basis. However, the real error correction scheme used is a convolutional code concatenated with a turbo code.
