Howdy!

You can steam instead of blanching, but I would steam for 1 1/2 times the recommended blanching time. Make sure you keep the corn in a single layer, so that the steam can reach all parts of the corn.

If you're using an electric steamer, I would fill the steamer with the most possible water and use the highest setting. And cool the corn for the same amount of time that you took to steam.

I wouldn't recommend steaming, blanching is best.
Steming would leave water absorbed in the corn. When that water freezes, it would break down the starches in the corn when defrosting, leaving the corn tough and dry.

Blanching, briefly submurging in ver hot boiling water seals in the starches and won't allow the water to get into the cornels. dab dry before freezing.

i wouldnt as it will take to long to get all the corn blanched the purpose of blanching in boiling water is to keep it from freezing burning and it will cook near to being fresh i only blanch for 1 to 2 minutes and you would have to steam to long to get all the corn ready at the same time....

I froze masses of corn for years. I cleaned the ears and used a plastic cutting board and cut the corn off of the cob and put it in a pot on the stove and heated it just till it started to bubble. Stir and do not put the burner too high. Ladel out into freezer bags and cool and freeze. If you freeze bags on a cookie sheet they will stack better in the freezer---once they are frozen remove the cookie sheet and stack.
