Good News Breakfast Smoothie

A "To Go" breakfast in a glass!

Ingredients

1/3 cup Low-fat vanilla yogurt
1/3 cup Orange or apple juice
1/2 Medium banana, ripe
1/3 cup Frozen strawberries

Preparation

Combine all ingredients in a blender and blend until smooth and creamy.

Prepare a casserole the night before. Pop it in the microwave when you wake up and it will be ready to go when you are.

Quick? Spray pam cooking spray in a cup, add 1-2 eggs, beat then cover with paper towe and microwave 1-1&1/2 mins. Put on a tortilla and add cheese and salsa.

BLT Breakfast Sandwiches:

Check the hollandaise sauce package for the fresh ingredients needed to prepare it.

1 (0.9-ounce) envelope hollandaise sauce mix
6 bacon slices, cooked and crumbled
2 (3-ounce) packages cream cheese, softened
2 tablespoons chopped fresh chives
3/4 teaspoon seasoned pepper, divided
4 sourdough bread slices, toasted
1 tablespoon butter or margarine
4 large eggs
4 lettuce leaves
2 small tomatoes, sliced

Prepare hollandaise sauce according to package directions; keep warm.

Stir together bacon, cream cheese, chives, and 1/4 teaspoon seasoned pepper; spread evenly on one side of each toasted bread slice.

Melt butter in a large nonstick skillet over medium heat. Gently break eggs into hot skillet, and sprinkle evenly with 1/4 teaspoon seasoned pepper. Cook 2 to 3 minutes on each side or until done.

Place lettuce leaves and tomatoes on top of bread slices, and top with fried eggs. Drizzle hollandaise sauce evenly over top, and sprinkle evenly with remaining 1/4 teaspoon seasoned pepper. Serve immediately.

Yield: Makes 4 servings

Apple Spiced Oatmeal
1 cup quick-cooking oats
1-3/4 cups apple cider
1 tablespoon butter
1 teaspoon ground cinnamon
1/8 teaspoon salt
Sliced bananas and blueberries
In a microwave-safe bowl, combine oats and cider. Microwave, uncovered on high for 2-3 minutes or until tender. Stir in the butter, cinnamon and salt. Serve with bananas and berries. Yield: 2 servings.

Bacon-Egg English Muffin
In a skillet, saucepan or omelet pan with high sides, bring 2-3 in. water to a boil. Reduce heat; simmer gently. Break cold eggs, one at a time, into a custard cup or saucer. Holding the dish close to the surface of the water, slip eggs, one at a time, into the water. Cook, uncovered, until whites are completely set and yolks begin to thicken, about 3 minutes.
Meanwhile, spread cream cheese over muffin halves. top with cheese slices. In a small skillet, cook Canadian bacon until heated through; place over cheese. Using a slotted spoon, place eggs over bacon. Yield: 1-2 servings.

Cinnamon Pancakes
1/2 cup plus 2 tablespoons all-purpose flour
2 tablespoons sugar
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 egg
1/2 cup milk
1 tablespoon vegetable oil
3/4 teaspoon vanilla extract
Maple syrup
In a bowl, combine the flour, sugar, baking powder, cinnamon and salt. In another bowl, combine the egg, milk, oil and vanilla. Stir into dry ingredients just until combined. In a lightly greased electric skillet, drop batter by 1/4 cupfuls; press lightly to flatten. Fry until golden brown, about 2 minutes on each side. Serve with syrup. Yield: 2 servings.

Go to Food Network and Look Up French Toast Casserole. You have to start it the night before, but it takes no time in the morning other than throwing it into the oven.

This one is fast & easy:
make scrambled eggs as usual, when they are firm, add some salsa, mix until warm.

Sprinkle with shredded chedder

Serve with sausage instead of bacon, and a dollop of sour cream

Scramble cheese eggs
1.put eggs,milk,american cheese in bowl
2 whip with wire whip
3 set in microwave for three minutes
4 with teaspoon mix contents
5 return to microwave for two minutes
6 check to see they are moist but not runny
7 season with salt & pepper

breakfast quesidilla
4 12" Flour Tortilla Wraps,
1 small onion small dice,
1 6" of your favorite sausage sliced,
3 tbsp diced green bell pepper,
1 small tomato small dice,
3 sliced pieces canned jalapeño small diced,
3 whole eggs beaten,
1 tsp black pepper,
pinch salt,
2 tbsp chopped cilantro,
4 sliced American cheese cut into strips or ½ cup of your favorite
shredded cheese.

Lay out tortillas on a clean counter. In medium sized sauté pan,
sauté onions, bell pepper, and favorite sausage. Add tomatoes and
jalapeños, beaten eggs, season with pepper and salt and cilantro and
scramble your eggs. Divide scrambles into four and place on the
half bottom side of the tortilla. Add shredded cheese on top and
place in a pre-heated 350 degree oven. Bake till cheese melts and
tortilla is a little bit crispy. Cut up each quesadilla into 3
pieces and serve.

Very simple and great idea.

grilled cheesy egg sandwhich
2 slices of honey wheat sliced bread,
2 eggs beaten,
pinch salt and black pepper,
2 tbsp butter and 2 slices of American cheese.
Variations: add diced: onions, bell pepper, tomatoes, other vegetables
and meats to your scramble eggs. Choose your favorite sliced cheese.

Scramble eggs to your liking in small (6" pan), transfer to a small
dish and set aside. Melt butter in pan with 1 tbsp of butter, place 1
slice of bread, add 1 slice of cheese to the bread, add scramble eggs,
another slice of cheese, and last slice of bread. Let bread brown
(like a grilled cheese). Remove sandwhich, add the last 1 tbsp of
butter to pan and brown the other side of the sandwhich. Enjoy.

So quick and easy that it really isn't even a recipe. You can have warm cereal on a cold day without any muss or fuss. After heating the cereal,You can add fresh fruit (blueberries, strawberries, ect...) Brown sugar could be subbed for the honey. Or, eliminate the extra sweetener and use vanilla soy milk instead of regular milk. The possibilities are endless.

1/2 cup Grape Nuts cereal
1/3 cup milk

Microwaves Poached Eggs"


This is the best way to prepare poached eggs for 2. It is quick, easy and almost foolproof. Please make sure you use a toothpick to pierce the yolk before cooking!

1 large egg
1/8 teaspoon white vinegar
1/3 cup water
salt and pepper
1 servings
6 minutes 5 mins prep

Instructions:

~Add the water and white vinegar to a 6 ounce custard cup.
~Break egg into cup, pierce egg yolk with toothpick, and cover dish loosely with plastic wrap.
~Place in microwave and cook for 1 minute or until desired doneness.
~You may need to experiment with cooking times based on the wattage of your microwave and taste preference.
~Immediately remove egg from hot water with a slotted spoon as it will continue to cook.
~Serve with salt and pepper to taste!

"Peach Oatmeal "


One delicious oatmeal! It reminds you of the Quaker peaches and cream oatmeal.This one is healthier...to packaged any day.

1/4 cup old fashioned oats or quick oats
1/3 cup water
1/4 cup sliced peaches in juice, canned (this works out to about 5 slices of peach and about 1/8 cup of juice)
1/8 teaspoon cinnamon
1/8 teaspoon butterscotch extract or vanilla extract
1/2 teaspoon Splenda sugar substitute (optional) or sugar (optional) or honey (optional)

1 servings
10 minutes 5 mins prep

Instructions:

~Cut up peach slices into small pieces.
~In a bowl add oats, water, and peaches with juice.
~Microwave for 2 minutes, stir, microwave for another 2 minutes, stir, then microwave in 1 minute intervals until cooked.
~Once cooked, add cinnamon, butterscotch extract, and sweetener.
NOTE: This serving seems small since it is only 1/4 cup of oats, but with the addition of peaches, it is quite filling, especially when served with a glass of milk; Feel free however, to increase one serving size to double this amount for a very hearty breakfast.
